The Bikini Cocktail

Makes enough for 10 servings

Ingredients for the Clementine Cordial (makes 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar

For the Premix (yields 850ml, to serve 10)

400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish

Method

To prepare the Citrus Syrup: Combine the listed components in a pan, heat until it reaches a simmer, stirring so the sugar melts. After that, take off the heat allowing it to cool down fully. Transfer into an sealable bottle, seal and refrigerate it in the refrigerator, it can be stored for up to four weeks.

To make Batch Mix: Combine all the liquid ingredients in a big jug, let it rest for one hour, then filter it best through a fine cloth, to ensure it's perfectly clear.

To serve: Pour 85ml of the cocktail base to a cocktail shaker containing ice, gently stirring gently for about 60 seconds to chill. Pour into an chilled martini glass or similar, top with the cranberries adding the final touch by giving it a brief mist of the essential oil over the drink.
